Healthy Chicken Parmesan Casserole

Ingredients:

1 – head of cauliflower

2 cups – chopped cooked chicken

1/2 – onion

1 – egg white

1/2 cup – cottage cheese

1 can (15 oz) – tomato sauce

1 tsp – Italian seasoning

1 tsp – garlic powder

1/2 tsp – oregano

salt and pepper to taste

1 cup – mozzarella cheese 2%

Directions:

Preheat oven to 425 degrees. Wash and cut cauliflower into small pieces. Chop onion and add to large microwave bowl with chopped cauliflower. Cover bowl with saran wrap and microwave for 5 minutes to soften. In separate bowl mix egg white, tomato sauce, cottage cheese, garlic powder, Italian seasoning and oregano. Add tomato mixture to cauliflower and onion mixture and stir until mixed well. Add cooked chicken and mix well. Season with salt and pepper. Add mixture to an 8×8 casserole dish. Cover with foil and bake for 30 minutes. Remove from oven, top with mozzarella cheese and bake for 10-15 minutes or until cheese is melted. Enjoy!
