Healthy Mini Blueberry Muffins

I have a healthy muffin recipe to share with you today that is grain and dairy free! This recipe is also paleo friendly. Each muffin has around 50 calories. I like to eat mine with a little maple syrup drizzled on top.

Ingredients:

1 cup – almond flour (1 1/4 cup raw almonds chopped in food processor until flour like)

2 –  ripe bananas

2 – eggs, whisked

1/2 cup – honey

1/4 tsp – baking soda

1 cup – blueberries

Directions:

Preheat oven at 350 degrees. Chop almonds in a food processor until flour like material. Mix almond flour and baking soda in a large bowl. In separate bowl mash bananas and add honey and whisked eggs. Add wet mixture to almond flour and blend well with hand mixer. Stir in blueberries. Add to greased mini muffin pan or normal muffin pan. Bake for 10 minutes or until slightly browned. Enjoy!
